Ingredients: 1 cup brown rice. 1 can 15 oz diced tomatoes. 1 cup vegetable broth. 1 onion, finely chopped. 1 teaspoon smoked paprika.
Instructions: Rinse the brown rice under cold water and drain. In the Instant Pot, combine rice, diced tomatoes with juice, vegetable broth, chopped onion, and smoked paprika. Close the lid, set the valve to sealing, and cook on high pressure for 22 minutes. Allow a natural pressure release for 5 minutes, then quick release any remaining pressure. Fluff the rice with a fork, and let it sit for a few minutes before serving.
