A creamy and flavorful Loaded Cauliflower Soup made effortlessly in a pressure cooker. Perfect for a cozy and comforting meal.
Ingredients: 1 large cauliflower, chopped. 1 medium onion, diced. 2 cloves garlic, minced. 4 cups vegetable broth. 1 cup shredded cheddar cheese. 1/2 cup heavy cream. 1/2 cup cooked and crumbled bacon. 2 green onions, chopped. Salt and pepper to taste.
Instructions: Get vegetable broth, chopped onion, minced garlic, and chopped cauliflower and put them in the pressure cooker. For 5 minutes, set the pressure cooker to high pressure and do it by hand. After the food is done cooking, let the pressure drop naturally for 5 minutes and then do a quick release. Pour the soup into a blender and blend it until it is smooth. Add the heavy cream and shredded cheddar cheese and mix well. Add pepper and salt to taste. Toast some bacon bits and chopped green onions and sprinkle them on top of the hot soup.
