A hearty and tasty beef stew that was cooked just right in a pressure cooker. Perfect for a meal that makes you feel good.
Ingredients: 2 lbs beef stew meat, cut into cubes. 1 onion, diced. 3 carrots, sliced. 3 potatoes, diced. 2 cloves garlic, minced. 1 cup beef broth. 1 can 14 oz diced tomatoes. 1 tsp salt. 1/2 tsp black pepper. 1 tsp dried thyme. 1 tsp paprika. 2 tbsp tomato paste.
Instructions: Season beef stew meat with salt, pepper, thyme, and paprika. Turn on the pressure cooker and select 'Saute' function. Add a bit of oil and saute the seasoned beef until browned on all sides. Add onions and garlic, saute until fragrant. Stir in tomato paste. Pour in beef broth and deglaze the bottom of the pot. Add carrots, potatoes, and diced tomatoes with their juice. Cancel 'Saute' function, secure the lid, and set the pressure cooker to 'High Pressure' for 25 minutes. Once done, allow natural pressure release for 10 minutes, then quick-release any remaining pressure. Adjust seasoning if necessary and serve hot. Enjoy your delicious and hearty beef stew!
