This delightful ice cream combines the sweetness of ripe peaches with the creamy richness of homemade ice cream, finished with a satisfying cookie crumble. It's a perfect treat for hot summer days or anytime you're craving something cool and sweet.
Ingredients: 2 cups heavy cream. 1 cup whole milk. 3/4 cup granulated sugar. 1 teaspoon vanilla extract. 2 ripe peaches, peeled, pitted, and diced. 1/2 cup crushed cookies your favorite kind.
Instructions: Mix heavy cream, milk, sugar, and vanilla extract in a large bowl with a whisk until the sugar is completely mixed in. Diced peaches should be slowly mixed into the cream mixture. Put the mixture into an ice cream maker and churn it according to the machine's instructions until it's the consistency of soft serve. Crushed cookies should be mixed into the ice cream that has been churned. Cover the ice cream and put it in a container that can go in the freezer. Freeze for at least 4 hours, or until it is firm. Put extra cookie crumble on top of each scoop of peaches and cream ice cream.

This apple and blackberry crumble recipe is a classic British dessert and its one I grew up with and still love making today. As soon as I spot the blackberries growing down our county lane the kiddies and I are out picking them. There is nothing better than eating freshly picked berries in season and there's nothing more perfect for an autumn dessert. For the full recipe click the link above.
