These Black Forest Cupcakes are a delicious twist on the classic Black Forest Cake. They feature moist chocolate cupcakes filled with cherry pie filling and topped with whipped cream, a maraschino cherry, and chocolate shavings.
Ingredients: 1 and 1/2 cups all-purpose flour. 3/4 cup unsweetened cocoa powder. 1 and 1/2 cups granulated sugar. 1 and 1/2 teaspoons baking powder. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 2 large eggs. 1 cup buttermilk. 1/2 cup vegetable oil. 2 teaspoons vanilla extract. 1/2 cup boiling water. 1 cup cherry pie filling. Whipped cream for topping. Maraschino cherries for garnish. Chocolate shavings for decoration.
Instructions: Warm up the oven to 350F 175C and put cupcake liners in a muffin tin. Sift the cocoa powder, sugar, baking powder, baking soda, and salt together in a bowl. In a separate bowl, mix the eggs, buttermilk, oil, and vanilla extract. Mix everything together well. Add the hot water and mix the batter well until it is smooth. It's okay that the batter isn't very thick. About two thirds of the way to the top of each cupcake liner, fill it with batter. Bake in an oven that has already been heated for 18 to 20 minutes, or until a toothpick stuck in the middle of a cupcake comes out clean. After taking the cupcakes out of the oven, let them cool in the pan for a few minutes. Then, move them to a wire rack to finish cooling. Make a well in the middle of each cupcake with a cupcake corer or a small knife once they are completely cool. Put cherry pie filling in each well. Spread whipped cream on top of each cupcake, and then add a maraschino cherry and chocolate shavings to the top. Give your Black Forest cupcakes to people and enjoy them!
