Ingredients: 2 cups crushed graham crackers. 1/4 cup melted butter. 1/4 cup sugar. 3 8 ounce packages cream cheese, softened. 1 cup sugar. 3 eggs. 1 teaspoon vanilla extract. 1/4 cup red wine preferably Merlot or Cabernet Sauvignon. Fresh berries for garnish optional.
Instructions: Preheat oven to 350F 175C. Mix crushed graham crackers, melted butter, and 1/4 cup sugar in a bowl until well combined. Press the mixture into the bottom of a 9-inch springform pan. In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and red wine until fully incorporated. Pour the batter over the crust in the springform pan. Bake in preheated oven for 45-50 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside with the door closed for an additional 30 minutes. Remove from oven and let cool completely. Chill in the refrigerator for at least 4 hours or overnight. Before serving, garnish with fresh berries if desired.
