Ingredients: 2 cups fresh spinach, chopped. 1 cup feta cheese, crumbled. 1/2 cup grated Parmesan cheese. 1/4 cup diced red bell pepper. 2 cloves garlic, minced. 1 teaspoon olive oil. Salt and pepper to taste. 1 sheet puff pastry, thawed. 1 egg, beaten for egg wash.
Instructions: Preheat your Philips Air Fryer to 375F 190C. In a skillet, heat olive oil over medium heat. Add minced garlic and saut for 1-2 minutes until fragrant. Add chopped spinach and diced red bell pepper to the skillet. Saut for another 2-3 minutes until spinach wilts and peppers soften. Remove the skillet from heat and let it cool for a few minutes. Then, stir in crumbled feta cheese, grated Parmesan cheese, salt, and pepper. Mix well. Roll out the thawed puff pastry sheet on a lightly floured surface to form a rectangle. Spread the spinach and cheese mixture evenly over the pastry sheet, leaving a small border around the edges. Starting from one of the long sides, tightly roll up the pastry, jelly-roll style, into a log shape. Seal the edge with a bit of beaten egg wash. Using a sharp knife, slice the pastry log into 1-inch thick pinwheels. Place the pinwheels in a single layer in the air fryer basket, leaving some space between them. Brush the tops of the pinwheels with the remaining egg wash. Air fry the pinwheels at 375F 190C for 10-12 minutes, or until they are golden brown and crispy.
