Ingredients: 1 cup canned pumpkin puree. 1/2 cup unsweetened applesauce. 1/2 cup molasses. 1/4 cup brown sugar. 1/4 cup vegetable oil. 2 eggs. 2 cups all-purpose flour. 1 1/2 teaspoons baking soda. 1 teaspoon ground cinnamon. 1 teaspoon ground ginger. 1/2 teaspoon ground cloves. 1/2 teaspoon salt. 1 cup diced apples. 1/2 cup chopped pecans or walnuts optional.
Instructions: Start by heating the oven to 350F 175C. Put the pumpkin puree, applesauce, molasses, brown sugar, vegetable oil, and eggs in a large bowl. Mix everything together well. Mix the baking soda, cinnamon, ginger, cloves, and salt in a different bowl with a whisk. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. Add the apple dices and nuts, if using, and mix them in well. For muffins, line the tin with paper liners or grease it well. To make muffins, put about two thirds of the batter into each cup. After the oven is hot, bake the muffins for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean.
