An old recipe calls for mashed potatoes and flour to be mixed together to make Irish potato bread, which is soft and hearty. You can eat it for breakfast or as a side dish with dinner.
Ingredients: 2 cups mashed potatoes. 2 cups all-purpose flour. 2 tsp baking powder. 1/2 tsp salt. 1/4 cup butter, melted. 1/2 cup milk.
Instructions: In a large bowl, combine mashed potatoes, flour, baking powder, and salt. Add melted butter and milk to the mixture. Mix until a dough forms. Turn the dough out onto a floured surface and knead gently until smooth. Divide the dough into equal portions and shape each portion into a flat round. Heat a skillet over medium heat and lightly grease with butter or oil. Cook the potato bread rounds for 3-4 minutes on each side, or until golden brown and cooked through. Serve warm and enjoy!
