Ingredients: 1 butternut squash, peeled and cubed. 2 apples, peeled and diced. 1 onion, chopped. 2 carrots, sliced. 2 cloves garlic, minced. 4 cups vegetable broth. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. Salt and pepper to taste. 1/4 cup heavy cream optional. Chopped fresh parsley for garnish.
Instructions: The onion and garlic should be cooked in a large pot until they become clear. Boil the carrots, apples, and butternut squash in water. Then add the vegetable broth, cinnamon, nutmeg, salt, and pepper. Bring to a boil, then lower the heat and let it cook for about 20 minutes, or until the vegetables are soft. Blend the soup until it's smooth, either with an immersion blender or a regular blender. If you want to use heavy cream, stir it in. Serve hot with chopped parsley on top.

Ingredients: 1 medium butternut squash, peeled, seeded, and diced. 2 apples, peeled, cored, and chopped. 1 onion, chopped. 2 cloves garlic, minced. 2 cups chicken or vegetable broth. 1/2 cup full-fat coconut milk. 2 tablespoons olive oil. 1 teaspoon ground cinnamon. 1/2 teaspoon ground nutmeg. Salt and pepper to taste.
Instructions: Warm up the olive oil in a big pot on medium heat. Add minced garlic and chopped onion. Saut the onion until it becomes transparent. Add chopped apples and diced butternut squash to the pot. Simmer for roughly five minutes, stirring now and then. After adding the broth either chicken or vegetable, bring the mixture to a boil. Once the squash is tender, reduce heat to low, cover, and simmer for 20 to 25 minutes. Puree the soup with an immersion blender or a standard blender until it's creamy and smooth. Once the soup has been pureed again, return it to the pot and mix in the coconut milk, salt, pepper, ground nutmeg, and cinnamon. Simmer for a further five to ten minutes to let the flavors combine. Serve hot, topped with a dollop of coconut milk and, if preferred, a dusting of cinnamon.
