Ingredients: 2 cans 13.5 oz each full-fat coconut milk. 1/2 cup raw cacao powder. 1/3 cup maple syrup. 1 teaspoon pure vanilla extract. Pinch of sea salt.
Instructions: Chill the cans of coconut milk in the refrigerator overnight. Open the cans of coconut milk and carefully scoop out the thick coconut cream that has risen to the top, leaving the watery liquid behind. In a blender, combine the coconut cream, raw cacao powder, maple syrup, vanilla extract, and sea salt. Blend until smooth and creamy. Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer the ice cream to a freezer-safe container, cover, and freeze for at least 4 hours or until firm. Before serving, let the ice cream sit at room temperature for a few minutes to soften slightly. Enjoy!
