Ingredients: 2 cups Jade Pearl rice. 2 cups water. 1/4 cup rice vinegar. 2 tbsp sugar. 1 tsp salt. Assorted sushi-grade fish salmon, tuna, yellowtail, etc.. Assorted vegetables cucumber, avocado, radish, etc.. Nori seaweed, thinly sliced. Sesame seeds for garnish. Pickled ginger and wasabi for serving.
Instructions: Run cold water over the Jade Pearl rice until the water is clear. In a rice cooker, put rice and water together and cook according to the manufacturer's directions. Melt the sugar, salt, and rice vinegar in a small saucepan over low heat. Allow to cool. After the rice is done, put it in a large bowl and slowly mix in the vinegar mixture until it is well mixed. Wait until it's cool enough to touch. Cut the vegetables and fish into thin strips or bite-sized pieces to get them ready for sushi. To put it together, put the seasoned rice into bowls or plates. Add different kinds of fish, vegetables, and nori seaweed on top. Add sesame seeds as a garnish. On the side, put pickled ginger, wasabi, and soy sauce.
