A traditional and well-known sushi roll made with avocado that is creamy, cucumber that is crunchy, and fake crab meat wrapped in seasoned rice and nori seaweed. Great for people who like sushi!
Ingredients: 2 cups sushi rice. 2 1/2 cups water. 1/4 cup rice vinegar. 2 tablespoons sugar. 1 teaspoon salt. 4 nori seaweed sheets. 1 avocado, thinly sliced. 1/2 cucumber, julienned. 8 imitation crab sticks. Toasted sesame seeds optional. Soy sauce, for serving. Pickled ginger, for serving. Wasabi, for serving.
Instructions: Rinse sushi rice under cold water until water runs clear. In a saucepan, combine sushi rice and water. Bring to a boil, then reduce heat to low and cover. Simmer for 18-20 minutes until rice is tender and water is absorbed. In a small saucepan, heat rice vinegar, sugar, and salt until sugar dissolves. Remove from heat. Transfer cooked rice to a large bowl and gently fold in vinegar mixture. Let cool to room temperature. Place a nori sheet on a bamboo sushi mat. Spread a thin layer of sushi rice evenly over the nori, leaving a 1-inch border at the top edge. Arrange avocado slices, cucumber, and crab sticks horizontally across the center of the rice. Using the bamboo mat, tightly roll the sushi away from you, pressing gently to seal. Slice the sushi roll into 8 pieces using a sharp knife dipped in water. Sprinkle with toasted sesame seeds if desired. Serve with soy sauce, pickled ginger, and wasabi.
