This Baked Sweet and Sour Tofu is a flavorful vegan twist on a classic dish. Crispy baked tofu is coated in a tangy and sweet sauce, paired with bell peppers, onions, and pineapple.
Ingredients: 1 block extra-firm tofu, pressed and cubed. 1/4 cup cornstarch. 1 tablespoon olive oil. 1 bell pepper, sliced. 1 onion, sliced. 1 cup pineapple chunks. 1/4 cup ketchup. 2 tablespoons soy sauce. 2 tablespoons rice vinegar. 2 tablespoons maple syrup. 1 clove garlic, minced. 1 teaspoon ginger, minced. Salt and pepper to taste.
Instructions: Turn on the oven and heat it up to 400F 200C. Toss the cubed tofu in cornstarch so that it is covered all over. Put the tofu on a baking sheet that has been lined with parchment paper. Bake for 25 to 30 minutes, or until it is crispy, turning it over every 15 minutes. Put olive oil in a saucepan and heat it over medium-low heat. Ginger, garlic, onion, and bell pepper should be added. Cook the vegetables in oil until they are soft. Mix the ketchup, soy sauce, maple syrup, salt, and pepper into the pineapple chunks. Mix it well, then let it cook for 5 to 7 minutes. Add the tofu to the pan with the sweet and sour sauce once it's crispy. Stir the tofu slowly to cover it with the sauce. You can put the sweet and sour tofu on top of rice or noodles. Have fun!
