A hearty and nutritious soup packed with quinoa, vegetables, and flavorful herbs. Perfect for a cozy and healthy meal.
Ingredients: 1 cup quinoa, rinsed. 4 cups vegetable broth. 2 cups chopped mixed vegetables carrots, celery, bell peppers. 1 can 15 oz diced tomatoes. 1 onion, diced. 3 cloves garlic, minced. 1 teaspoon dried thyme. 1 teaspoon dried oregano. Salt and pepper to taste. 2 cups fresh spinach.
Instructions: Put diced tomatoes, onion, garlic, thyme, oregano, salt, and pepper in a slow cooker. Add vegetable broth and mix the vegetables. Put the lid on top and cook on low for 6 to 8 hours or high for 3 to 4 hours. In the last 30 minutes of cooking, add the fresh spinach and mix it in. If you need to, change the seasonings and serve hot.
