Instructions: Saut garlic and onions in olive oil in the pressure cooker until they smell good. Put in cauliflower, bell peppers, carrots, and zucchini. Leave it to cook for three more minutes. To the tomato dices, thyme, paprika, cumin, salt, and pepper, add the quinoa and stir it in. Pressure cook for 8 minutes with the lid locked and the heat on high. Quickly let the pressure go out, carefully lift the lid, and stir the stew. Before serving, sprinkle with fresh parsley.

Ingredients: 3 pounds beef chuck roast. 1 packet dry onion soup mix. 1 cup beef broth. 1/4 cup red wine vinegar. 1 tablespoon Worcestershire sauce. 3 cloves garlic, minced. 1 onion, sliced. 4 carrots, peeled and cut into chunks. 4 potatoes, peeled and cut into chunks. 2 tablespoons cornstarch. 2 tablespoons water. Salt and pepper to taste.
Instructions: Season the beef chuck roast with salt and pepper. In a slow cooker, combine onion soup mix, beef broth, red wine vinegar, Worcestershire sauce, and minced garlic. Add the seasoned beef chuck roast to the slow cooker. Top the beef with sliced onion, carrots, and potatoes. Cover and cook on low for 8 hours or until the beef is tender. Once cooked, remove the beef and vegetables from the slow cooker and keep warm. In a small bowl, mix cornstarch and water until smooth. Stir the cornstarch mixture into the juices in the slow cooker. Turn the slow cooker to high and cook for an additional 15 minutes or until the sauce thickens. Slice the beef and serve with the vegetables and gravy.

Put the lid on top and cook on low for 6 to 8 hours or high for 3 to 4 hours. In the last 30 minutes of cooking, add the fresh spinach and mix it in. If you need to, change the seasonings and serve hot.
