One of my favorite Korean dishes is mul-naengmyeon (물냉면) which literally translates to “cold water noodles”. It might sound terrible but for what it lacks in name it really delivers in taste and texture. This dish originates from Pyongyang, North Korea and you can still get it there if you a brazen enough to take a trip to the DPRK! Mul-naengmyeon consists of long thin noodles made from buckwheat, sweet potato, and arrowroot flours, which give it a great chewy texture. It is also naturally gluten and dairy free. The chewiness is so different from Italian pastas and I think it’s rather quirky and fun in the mouth just like the rest of this dish. The broth is made of beef broth and it’s served icy cold – with ice cubes or ice flakes swimming around in the bowl! Traditional topping are slices of sweet Asian pear, thinly sliced daikon, lightly salted cucumber slices, a few slices of brisket, and a boiled egg. It’s clean and refreshing.
