RECIPE (1 serving, 30min prep time): Protein: -1 small piece of ginger, chopped -100g tofu or tempeh, crumbled -oil for frying -2 Tsp hoisin sauce to glaze

Fry the crumbled tofu/tempeh in some oil with the ginger until browned. Season with some 5 spice and hoisin sauce and remove from the pan.

Else: -1 espresso cup rice -1 1/2 espresso cups water -salt to taste

Add to the pan, cover and bring to a boil. Then reduce the heat to low.

Veggies: -1 small carrot -4 mushrooms -2 pieces frozen spinach -1/4 zucchini

Finely chop everything and arrange on top of the rice. Continue steaming for 10-15mins until the rice and veggies are cooked.

Sauce: -1 Tbsp Gochujang -2 Tsp sesame oil -2 Tsp water -2 Tsp sugar -1 Tsp vinegar
