1 cup lump crab meat 1/2 cup heavy cream 1/4 cup whole milk 2 large egg yolks 1 tablespoon Dijon mustard 1 tablespoon Worcestershire sauce 1 teaspoon lemon juice Salt and pepper to taste 1/4 cup grated Parmesan cheese 1 tablespoon sugar (for topping)
Directions:
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the lump crab meat, heavy cream, whole milk, egg yolks, Dijon mustard, Worcestershire sauce, lemon juice, salt, and pepper. Mix gently to avoid breaking the crab meat. Divide the mixture evenly among ramekins and place them in a baking dish. Fill the dish with hot water until it reaches halfway up the sides of the ramekins to create a water bath. Bake for 25-30 minutes, or until the crab brulees are set and slightly firm to the touch. Remove the ramekins from the water bath and let them cool to room temperature, then refrigerate for at least 2 hours. Before serving, sprinkle a thin layer of sugar on top of each brulee and use a kitchen torch to caramelize the sugar until golden brown.
