Savor the simplicity of traditional hummus combined with garlic and lemon flavors. This rich dip is great as an appetiser at parties or as a snack.
Ingredients: 1 can 15 ounces chickpeas, drained and rinsed. 1/4 cup fresh lemon juice about 1 large lemon. 1/4 cup well-stirred tahini. 1 small garlic clove, minced. 2 tablespoons extra-virgin olive oil, plus more for serving. 1/2 teaspoon ground cumin. Salt to taste. 2 to 3 tablespoons water. Dash of paprika, for garnish. Chopped fresh parsley, for garnish.
Instructions: Put chickpeas, lemon juice, tahini, garlic that has been minced, olive oil, cumin, and a pinch of salt in a food processor. Blend or process the food until it's creamy and smooth. One tablespoon of water at a time until you get the right consistency if it's too thick. If you think it needs more salt or lemon juice, taste it and add more of either. Put the hummus in a bowl for serving and drizzle it with extra-virgin olive oil. Add paprika and chopped fresh parsley on top to make it look nice. You can eat it with pita bread, vegetables, or any other food you like to dip.
