Ingredients: 2 cups cooked brown rice. 2 tablespoons vegetable oil. 1 small onion, diced. 2 cloves garlic, minced. 1 cup mixed vegetables e.g., peas, carrots, bell peppers. 2 eggs, beaten. 2 tablespoons soy sauce. 1 teaspoon sesame oil. Salt and pepper to taste. Green onions, chopped for garnish.
Instructions: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add minced garlic and chopped onion. Mix the veggies in the skillet with the scrambled eggs. Stir-fry the cooked brown rice in the skillet for two to three minutes, breaking up any rice clumps. For even flavor distribution, stir-fry the rice for a further two to three minutes after adding soy sauce and sesame oil. To taste, add salt and pepper to the fried rice.
