Hatch chilies that have been roasted over a fire will give your guacamole a little heat and smoke. The creamy avocados and strong flavors of the roasted chilies in this recipe make a tasty dip that's great for any event.
Ingredients: 3 ripe avocados, halved and pitted. 2 fire roasted hatch chilies, peeled, seeded, and diced. 1 small red onion, finely chopped. 1/4 cup fresh cilantro, chopped. Juice of 1 lime. Salt and pepper to taste.
Instructions: Take the avocado flesh out and mash it with a fork in a medium-sized bowl. Along with the chopped red onion and cilantro, add the diced fire-roasted hatch chilies. Add the lime juice and salt and pepper to taste. Mix all the ingredients together slowly until they are well mixed. Put it on tortilla chips right away or use it as a topping for tacos, burritos, or quesadillas.
