Ingredients: 2 ripe avocados. 1/4 cup cocoa powder. 1/4 cup maple syrup. 1/4 cup almond milk. 1 tsp vanilla extract. Pinch of salt.
Instructions: Cut avocados and scoop out the flesh. In a blender, combine avocado flesh, cocoa powder, maple syrup, almond milk, vanilla extract, and a pinch of salt. Blend until smooth and creamy, scraping down the sides as needed. Taste and adjust sweetness if desired by adding more maple syrup. Transfer the pudding to serving bowls and chill in the refrigerator for at least 30 minutes. Serve topped with your favorite fruits or nuts.

Ingredients: 2 tbsp almond flour. 1 tbsp coconut flour. 1/2 tsp baking powder. 1/4 tsp ground cinnamon. 1 egg. 2 tbsp almond milk. 1 tbsp maple syrup optional for sweetness. 1/4 tsp vanilla extract. 1 tbsp coconut oil for greasing. For the cinnamon filling:. 1 tsp coconut sugar. 1/2 tsp ground cinnamon. 1/2 tsp coconut oil melted.
Instructions: In a microwave-safe mug, grease the sides with coconut oil to prevent sticking. In a small bowl, mix together almond flour, coconut flour, baking powder, and 1/4 tsp of ground cinnamon. In a separate bowl, whisk the egg, almond milk, maple syrup if using, and vanilla extract. Combine the wet and dry ingredients, stirring until a smooth batter forms. In another small bowl, mix the coconut sugar, 1/2 tsp of ground cinnamon, and melted coconut oil to create the cinnamon filling. Pour half of the batter into the greased mug, then add the cinnamon filling mixture on top. Pour the remaining batter over the cinnamon filling. Microwave the mug on high for 1-2 minutes, or until the cinnamon roll rises and sets in the middle. Carefully remove the mug from the microwave it will be hot and let it cool slightly.
