Ingredients: 2 cups cauliflower florets. 2 ripe bananas. 1/2 cup almond milk. 1/4 cup maple syrup. 1 tsp vanilla extract. 2 cups flour. 1/2 cup brown sugar. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1 tsp cinnamon. 1/4 cup melted coconut oil. 1/2 cup powdered sugar. 1 tbsp almond milk. 1/2 tsp cinnamon.
Instructions: Warm the oven up to 175F 350C. Prepare a Bundt cake pan by greasing it. Use a food processor to chop cauliflower into very small pieces. Put it in a bowl. Add the almond milk, maple syrup, vanilla, and bananas to the same food processor. Blend the mixture until it is smooth. Put the cauliflower mixture and the banana mixture in a large bowl and mix them together. Put in the cinnamon, baking powder, brown sugar, flour, and baking soda. Mix everything together well. Add the melted coconut oil and mix it in evenly. Add the batter to the bundt cake pan that has been prepared. Bake for 35 to 40 minutes, or until you can stick a toothpick in the middle and it comes out clean. The cake should cool in the pan for 10 minutes before being moved to a wire rack to cool all the way down. Mix powdered sugar, almond milk, and cinnamon in a small bowl with a whisk until the mixture is smooth. Spread icing on the cake after it has cooled. Cut and serve. Have fun!
