Ingredients: 1 small pumpkin, peeled and diced. 2 boneless, skinless chicken breasts, diced. 1 onion, chopped. 2 cloves garlic, minced. 1 tablespoon olive oil. 1 can 13.5 oz coconut milk. 2 cups chicken broth. 2 tablespoons curry powder. 1 teaspoon ground cumin. 1/2 teaspoon ground ginger. Salt and pepper to taste. Fresh cilantro leaves for garnish.
Instructions: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and saut until translucent. Add the diced chicken and cook until no longer pink. Stir in the curry powder, ground cumin, ground ginger, salt, and pepper. Add the diced pumpkin and cook for a few minutes, stirring to coat with the spices. Pour in the coconut milk and chicken broth. Bring to a simmer and let it cook until the pumpkin is tender about 20-25 minutes. Using an immersion blender or a regular blender, puree the soup until smooth. Return the soup to the pot and heat it through. Adjust the seasonings if necessary. Serve hot, garnished with fresh cilantro leaves.
