Ingredients: 2 pounds ground chuck 80% lean, 20% fat. Kosher salt and freshly ground black pepper. 8 slices American cheese. 4 hamburger buns, split and toasted. 1/2 cup mayonnaise. 2 tablespoons ketchup. 1 tablespoon yellow mustard. 1 teaspoon Worcestershire sauce. 1/2 teaspoon hot sauce. 8 leaves lettuce. 16 slices ripe tomatoes. 8 slices red onion. 16 slices dill pickles.
Instructions: Warm up the grill over medium-high heat. Cut the ground chuck into four equal pieces and form each into a patty. Season both sides with black pepper and kosher salt that has just been ground. For medium-rare, put the patties on the grill and cook for about 4 to 5 minutes per side. You can change the cooking time to get the level of doneness you want. Add two slices of American cheese to each patty in the last minute of cooking. To make the sauce, put the mayonnaise, ketchup, yellow mustard, Worcestershire sauce, and hot sauce in a small bowl and mix them together. The burgers are done when the cheese melts and the meat is done to your liking. Take them off the grill. Spread the sauce on the toasted bun halves to make the burgers. On the bottom bun, put a lettuce leaf. Then, add a burger patty with cheese, two tomato slices, one red onion slice, and two pickle slices. Put the other half of the bun on top.
