This recipe for egg fried rice is quick, tasty, and ideal for a weeknight dinner. It's quick to prepare and bursting with flavor!
Ingredients: 2 cups cooked rice, cold. 2 eggs. 2 tablespoons vegetable oil. 1/2 cup frozen peas and carrots, thawed. 3 cloves garlic, minced. 2 tablespoons soy sauce. 1 teaspoon sesame oil. 1/4 teaspoon black pepper. 2 green onions, chopped.
Instructions: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and saut for 30 seconds until fragrant. Push the garlic to one side of the skillet and crack the eggs into the other side. Scramble the eggs until they are fully cooked and then mix them with the garlic. Add the thawed peas and carrots to the skillet and stir-fry for 2-3 minutes. Add the cold cooked rice to the skillet and break it apart with a spatula. Pour soy sauce and sesame oil over the rice and stir-fry for an additional 3-4 minutes. Season with black pepper and mix well. Stir in the chopped green onions and cook for another minute. Serve hot and garnish with extra green onions if desired.

Ingredients: 8 oz penne pasta. 1 cup cherry tomatoes, halved. 1 cup lettuce, chopped. 1/2 cup crispy bacon bits. 1/4 cup mayonnaise. 2 tbsp sour cream. 1 tsp Dijon mustard. 1/2 tsp garlic powder. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Follow the directions on the package to cook the penne pasta. Take it out and let it cool down. Put chopped lettuce, cherry tomatoes, and crispy bacon bits in a large bowl. Add the sour cream, Dijon mustard, garlic powder, salt, and pepper to a different small bowl and mix them together using a whisk. Before adding the pasta to the big bowl of other things, make sure it is cool. Put the dressing on top of the pasta salad and toss it around so that everything is covered. Put it in the fridge for at least 30 minutes before you serve it. Before serving, sprinkle with fresh basil leaves. Have fun with your tasty BLT pasta salad!
