These PB Pancakes are a delightful twist on classic pancakes, featuring the rich flavor of peanut butter. They're perfect for a cozy breakfast or brunch.
Ingredients: 1 cup all-purpose flour. 2 tablespoons granulated sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1/4 cup creamy peanut butter. 1 large egg. 1/2 teaspoon vanilla extract. 1/4 cup chocolate chips optional. Maple syrup and extra peanut butter for serving.
Instructions: Mix the flour, sugar, baking powder, baking soda, and salt together in a large bowl. Add the peanut butter, egg, and vanilla extract to a different bowl and mix them well with a whisk. Add the wet ingredients to the dry ones and mix them together just until they are mixed. You can add the chocolate chips if you want to. Set a nonstick skillet or griddle over medium heat and use cooking spray or butter to lightly coat it. Put 1/4 cup of the pancake batter at a time into the pan. Cook until bubbles appear on top. Then flip the pancake over and cook the other side until it is golden brown. Do it again with the rest of the batter. If you want to serve the PB pancakes hot, drizzle them with maple syrup and add more peanut butter on top. Have fun with your tasty peanut butter pancakes!

For the Crumb Topping:. 1/2 cup all-purpose flour. 1/2 cup granulated sugar. 1/4 cup unsalted butter, cold and cubed. 1 tsp ground cinnamon.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a mixing bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, combine melted butter, milk, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Divide the batter evenly among the muffin cups, filling each about 2/3 full. To make the crumb topping, combine flour, sugar, cold cubed butter, and cinnamon in a separate bowl. Use a fork or pastry cutter to blend until it forms coarse crumbs. Sprinkle the crumb topping over each muffin. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the tin for a few minutes, then transfer to a wire rack to cool completely. Serve and enjoy!

Ingredients: 2 ripe pears, peeled, cored, and sliced. 3 tablespoons unsalted butter. 2 tablespoons honey. 1/2 cup all-purpose flour. 1/2 cup milk. 3 large eggs. 1/4 teaspoon salt. 1/4 teaspoon ground cinnamon. Powdered sugar for dusting. Maple syrup for serving optional.
Instructions: Turn on your oven and heat it up to 425F 220C. Melt the butter over medium heat in a 10-inch skillet that can go in the oven. Put the sliced pears in the pan and cook for five minutes, or until they begin to get soft. Pour the honey over the pears and cook for two more minutes, stirring occasionally. Put the flour, milk, eggs, salt, and ground cinnamon in a blender. Mix until it's smooth. Cover the pears in the pan with the batter. Move the skillet to an oven that is already hot and bake the pancake for 18 to 20 minutes, or until it puffs up and turns golden brown. Be careful when you take the skillet out of the oven; the handle will be hot. Sprinkle powdered sugar on top of the pancake. Cut the puffed pear pancake into pieces and serve it right away. If you want, you can also drizzle it with maple syrup.
