Ingredients: 2 cups cooked chickpeas. 2-3 roasted jalapenos, seeds removed adjust to taste. 3 cloves garlic, minced. 2 tablespoons tahini. 2 tablespoons olive oil. 2 tablespoons lemon juice. 1/2 teaspoon ground cumin. Salt to taste. 2-3 tablespoons water adjust for desired consistency. Fresh cilantro leaves for garnish optional.
Instructions: Start by roasting the jalapenos. You can do this by placing them under a broiler or over an open flame until the skin is charred and blistered. Then, place them in a sealed plastic bag for a few minutes to steam, which will make it easier to remove the skin. Once cooled, remove the skin, seeds, and stems. In a food processor, combine the chickpeas, roasted jalapenos, minced garlic, tahini, olive oil, lemon juice, ground cumin, and a pinch of salt. Blend the mixture until smooth, scraping down the sides as needed. If the hummus is too thick, you can add water, one tablespoon at a time, until you reach your desired consistency.
