These cranberry coconut donuts are a guilt-free treat that tastes so delicious, you won't believe they're actually healthy. Packed with the goodness of almond flour and coconut, and sweetened with honey or maple syrup, they make for a perfect breakfast or snack option.
Ingredients: 1 cup almond flour. 1/4 cup coconut flour. 1/4 cup unsweetened shredded coconut. 1/2 cup dried cranberries. 1/4 cup coconut oil, melted. 1/4 cup honey or maple syrup. 2 large eggs. 1/2 tsp vanilla extract. 1/2 tsp baking powder. 1/4 tsp salt. 1/4 cup unsweetened almond milk.
Instructions: Preheat your oven to 350F 175C. In a mixing bowl, combine almond flour, coconut flour, shredded coconut, dried cranberries, baking powder, and salt. In another bowl, whisk together melted coconut oil, honey or maple syrup, eggs, and vanilla extract. Gradually add the wet ingredients to the dry ingredients and mix well. Stir in the almond milk until you have a smooth batter. Grease a donut pan and spoon the batter into the molds. Bake in the preheated oven for 15-18 minutes or until the donuts turn golden brown and a toothpick comes out clean when inserted. Remove the donuts from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
