Ingredients: 1 tablespoon olive oil. 1/2 onion, diced. 2 cloves garlic, minced. 1 jalapeno, seeded and diced. 1/2 pound ground beef. 1 teaspoon chili powder. 1/2 teaspoon cumin. 1/2 teaspoon paprika. 1/4 teaspoon cayenne pepper. Salt and pepper to taste. 1 cup shredded cheddar cheese. 1 cup shredded Monterey Jack cheese. 1/2 cup diced tomatoes. 1/4 cup chopped cilantro. 1/4 cup milk or cream.

Add ground beef to the skillet, breaking it up with a spoon, and cook until browned, about 5-6 minutes. Stir in chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Cook for an additional 2 minutes. Reduce heat to low. Stir in shredded cheddar and Monterey Jack cheese until melted and smooth. Add diced tomatoes, chopped cilantro, and milk or cream, stirring until heated through and well combined. Taste and adjust seasoning if needed.
