Ingredients: 1 cup quinoa, rinsed. 2 cups vegetable broth. 4 large bell peppers, any color. 1 can 15 oz black beans, drained and rinsed. 1 cup corn kernels fresh, frozen, or canned. 1 cup diced tomatoes. 1 small onion, diced. 2 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon chili powder. Salt and pepper to taste. 1 cup shredded vegan cheese optional. Fresh cilantro for garnish optional.
Instructions: Preheat the oven to 375F 190C. In a medium saucepan, bring the vegetable broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15-20 minutes, or until quinoa is cooked and liquid is absorbed. While quinoa is cooking, prepare the bell peppers by cutting off the tops and removing seeds and membranes. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, and cook until softened. Stir in black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper. Cook for another 5 minutes. Once quinoa is cooked, add it to the skillet with the bean mixture. Stir to combine thoroughly. Stuff each bell pepper with the quinoa and bean mixture, pressing down gently to pack it in. If using vegan cheese, sprinkle it over the tops of the stuffed peppers. Place stuffed peppers in a baking dish and cover with aluminum foil. Bake in the preheated oven for 25-30 minutes, or until peppers are tender. Garnish with fresh cilantro before serving, if desired.
