Ingredients: 3-4 lbs beef brisket. 1 cup beef broth. 1/2 cup soy sauce. 1/4 cup Worcestershire sauce. 1/4 cup Dijon mustard. 4 cloves garlic, minced. 1 tablespoon brown sugar. 1 teaspoon onion powder. 1 teaspoon smoked paprika. 1/2 teaspoon black pepper. 1/2 teaspoon dried thyme. 2 tablespoons vegetable oil.
Instructions: Pat dry the brisket with paper towels. In a bowl, mix together soy sauce, Worcestershire sauce, Dijon mustard, garlic, brown sugar, onion powder, smoked paprika, black pepper, and dried thyme to create the marinade. Rub the brisket with the marinade, ensuring even coverage. Let it marinate for at least 30 minutes, or refrigerate overnight for enhanced flavor. Set the Instant Pot to 'Saut' mode, heat vegetable oil, and sear the brisket on all sides until browned. Add beef broth to the Instant Pot, then place a trivet inside. Put the seared brisket on the trivet. Close the Instant Pot lid, set to 'Pressure Cook' mode, and cook on high pressure for 60-70 minutes depending on thickness. Allow natural pressure release for 15 minutes, then perform a quick pressure release. Carefully remove the brisket from the Instant Pot and let it rest for 10 minutes before slicing. Serve slices with the cooking juices as a delicious gravy.
