Ingredients: 4 cups vegetable broth. 4 cups corn kernels fresh or frozen. 1 onion, diced. 3 cloves garlic, minced. 2 medium potatoes, peeled and diced. 1 red bell pepper, diced. 1 teaspoon ground cumin. 1/2 teaspoon smoked paprika. 1/4 teaspoon cayenne pepper optional. 1 cup unsweetened almond milk. Salt and pepper to taste. Fresh cilantro or parsley for garnish.
Instructions: In a large pot, saut onions and garlic until softened. Add potatoes, bell pepper, cumin, paprika, and cayenne pepper. Stir well. Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes or until potatoes are tender. Add corn kernels and almond milk. Cook for an additional 5 minutes. Use an immersion blender to blend part of the soup to desired consistency, leaving some chunks for texture. Season with salt and pepper to taste. Serve hot, garnished with fresh cilantro or parsley.
