German Borscht is a hearty and flavorful soup made with beets, carrots, potatoes, and onions. It's a comforting dish that warms you up on a cold day and packs a punch of nutrients from the vegetables.
Ingredients: 500g beets, peeled and grated. 2 carrots, peeled and grated. 1 onion, finely chopped. 2 potatoes, peeled and diced. 1 tablespoon vegetable oil. 1 liter vegetable broth. 2 bay leaves. 1 tablespoon apple cider vinegar. Salt and pepper to taste. Sour cream and fresh dill for garnish.
Instructions: Put vegetable oil in a large pot and heat it over medium-low heat. Put in the chopped onion and cook it until it turns clear. Grate in the beets, carrots, and potatoes. Mix well. Add the vegetable broth and bay leaves. Bring to a boil, then lower the heat and let it cook for 20 to 25 minutes, until the vegetables are soft. Add the apple cider vinegar and season with salt and pepper to taste. Take out the bay leaves. Add a dollop of sour cream and fresh dill on top of the hot dish to serve. Have fun!
