Ingredients: 4 tomatoes, diced. 1/2 onion, finely chopped. 1 jalapeno, seeded and minced. 1/4 cup fresh cilantro, chopped. 2 tablespoons lime juice. Salt and pepper to taste. 1 avocado, diced optional.
Instructions: In a mixing bowl, combine diced tomatoes, finely chopped onion, minced jalapeno, and chopped cilantro. Add lime juice, salt, and pepper to the bowl. Mix well to combine all the ingredients. For extra creaminess, add diced avocado to the mixture and gently fold it in. Refrigerate the Pico de Gallo for at least 30 minutes before serving to allow flavors to meld together. Serve chilled as a topping for keto-friendly tacos, salads, or as a dip with low-carb chips.

California Roll is a popular type of sushi roll filled with imitation crab, avocado, and cucumber. It's easy to make and perfect for sushi lovers!
Ingredients: 2 cups sushi rice. 4 nori seaweed sheets. 1/2 lb imitation crab meat. 1 avocado, sliced. 1 cucumber, julienned. 2 tbsp rice vinegar. 2 tbsp sugar. 1/2 tsp salt. Soy sauce, for serving. Pickled ginger, for serving. Wasabi, for serving.
Instructions: Follow the directions on the package to cook the sushi rice. Mix rice vinegar, sugar, and salt in a small bowl until the sugar and salt are gone. Add this to the cooked rice and mix it in. On a bamboo sushi mat, put a sheet of nori. Cover the nori with a thin layer of rice, leaving about an inch of space at the top. In the middle of the rice, make a line of crab meat, avocado slices, and cucumber strips. Wrap the sushi tightly around the bamboo mat and roll it away from you. Press the edge of the mat gently to seal it. Cut the roll into 8 pieces with a sharp knife that has been dipped in water to keep it from sticking. Do it again with the rest of the ingredients. Soy sauce, pickled ginger, and wasabi should be served with it.
