Ingredients: 1 large eggplant. 2 cloves garlic, minced. 1/4 cup tahini. 2 tablespoons lemon juice. 2 tablespoons olive oil. Salt and pepper to taste. Crackers, for serving. Cherry tomatoes, for garnish.
Instructions: Preheat the oven to 400F 200C. Prick the eggplant with a fork in several places and place it on a baking sheet. Roast the eggplant in the preheated oven for 45-50 minutes, or until the skin is charred and the flesh is soft. Remove the eggplant from the oven and let it cool slightly. Peel off the skin of the eggplant and discard. In a food processor, combine the roasted eggplant flesh, minced garlic, tahini, lemon juice, olive oil, salt, and pepper. Blend until smooth and creamy. Transfer the dip to a serving bowl. Garnish with cherry tomatoes and drizzle with a little olive oil, if desired. Serve with crackers and enjoy!
