A tasty and healthy taco bowl with quinoa, black beans, corn, and a mix of vegetables. Fresh avocado, cherry tomatoes, and cilantro are on top. Every bite has just the right amount of spice and freshness.
Ingredients: 1 cup quinoa. 2 cups vegetable broth. 1 tablespoon olive oil. 1 onion, diced. 2 cloves garlic, minced. 1 red bell pepper, diced. 1 can 15 oz black beans, drained and rinsed. 1 cup corn kernels fresh or frozen. 1 teaspoon cumin. 1 teaspoon chili powder. 1/2 teaspoon paprika. Salt and pepper to taste. 1 avocado, sliced. 1 cup cherry tomatoes, halved. 1/2 cup cilantro, chopped. Lime wedges for serving. Sour cream or yogurt optional.
Instructions: Run cold water over the quinoa and drain it. Put the quinoa and vegetable broth in a medium saucepan. Once it starts to boil, lower the heat, cover, and let it cook for 15 to 20 minutes, or until the quinoa is done and the liquid is absorbed. Warm up the olive oil in a big pan over medium-low heat. Add the diced onion and cook until it turns clear. Cut up some garlic and red bell pepper and add them to the pan. After two to three minutes, the peppers should be just barely soft. Add the corn, cumin, chili powder, paprika, salt, and pepper, and mix them in. Add five more minutes of cooking to let the flavors mix. Mix the spicy vegetable mixture with the cooked quinoa. Mix well, and then cook for another two to three minutes to heat everything through. Put the quinoa taco mix in bowls and top each one with chopped cilantro, avocado, and cherry tomatoes. Add sour cream or yogurt and lime wedges as a garnish if you want. Have fun with your Spicy Quinoa Taco Bowl!
