Molasses, the unsung hero of superfoods, adds depth of flavor and richness to these vegan cookies, while providing essential minerals like iron, calcium, and potassium. These cookies are also gluten-free, making them suitable for those with dietary restrictions.
Ingredients: 1 cup almond flour. 1/2 cup dried cranberries. 1/4 cup molasses. 1/4 cup coconut oil, melted. 1/4 cup maple syrup. 1 tsp vanilla extract. 1/2 tsp baking soda. 1/4 tsp salt. 1/4 cup almond slices optional, for topping.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Put almond flour, dried cranberries, molasses, melted coconut oil, maple syrup, vanilla extract, baking soda, and salt in a large bowl. Mix everything together well. Drop dough onto the baking sheet that has been prepared, leaving space between each cookie. You can use a cookie scoop or a spoon to do this. No need to: Add some almond slices to the top of each cookie to make it look nice. Put it in an oven that is already hot and bake it for 10 to 12 minutes, or until the edges are golden brown. Take it out of the oven and let it cool for 5 minutes on the baking sheet. Then, move it to a wire rack to finish cooling. Have fun with your tasty vegan molasses cranberry cookies!
