A vibrant and hearty salad featuring the earthy flavors of roasted beets, the crispness of kale, and the bright notes of cherry tomatoes and fresh basil. Tossed with a balsamic vinaigrette and topped with feta cheese, this panzanella is a delightful and nutritious dish.
Ingredients: 3 medium beets, roasted and cubed. 4 cups kale, chopped. 1 cup cherry tomatoes, halved. 1/2 red onion, thinly sliced. 1/2 cup croutons. 1/4 cup fresh basil leaves, torn. 1/4 cup feta cheese, crumbled. 2 tablespoons olive oil. 2 tablespoons balsamic vinegar. Salt and pepper to taste.
Instructions: Start by heating the oven to 400F 200C. Separate the beets and wrap each one in aluminum foil. Roast them for 45 to 60 minutes, or until a fork can go through them easily. After they cool down, peel and cut them into cubes. Put the chopped kale, cherry tomatoes halved, thinly sliced red onion, croutons, torn fresh basil leaves, and crumbled feta cheese in a large salad bowl. Put the olive oil and balsamic vinegar in a small bowl and mix them together with a whisk. Pour this dressing over the salad and mix it all together. Add pepper and salt to taste. Before you serve the salad, let it sit for about 10 minutes so that the flavors can mix. Have fun with your tasty Roasted Beet and Kale Panzanella!
