A delicious gluten-free twist on the classic Chicken Lombardy recipe. Tender chicken breasts are topped with crispy bacon, sautรยฉed mushrooms, and a savory Marsala wine sauce, then baked with gooey melted cheese until golden and bubbly.
Ingredients: 4 boneless, skinless chicken breasts. Salt and pepper to taste. 1/2 cup gluten-free all-purpose flour. 2 tablespoons olive oil. 8 slices gluten-free bacon, diced. 8 ounces mushrooms, sliced. 1/2 cup Marsala wine. 1/2 cup chicken broth. 1/2 cup shredded mozzarella cheese. 1/2 cup shredded Swiss cheese. 2 tablespoons chopped fresh parsley, for garnish.
Instructions: Preheat oven to 375F 190C. Season chicken breasts with salt and pepper, then dredge them in gluten-free flour. In a large skillet, heat olive oil over medium-high heat. Add chicken breasts and cook until browned, about 4 minutes per side. Remove from skillet and set aside. In the same skillet, add diced bacon and cook until crispy. Remove bacon from skillet and drain excess fat, leaving about 1 tablespoon. Add sliced mushrooms to the skillet and cook until browned and tender, about 5 minutes. Pour Marsala wine into the skillet and scrape up any browned bits from the bottom. Let the wine cook for 2 minutes. Stir in chicken broth and bring to a simmer. Return chicken breasts and bacon to the skillet, nestling them into the sauce. Top each chicken breast with shredded mozzarella and Swiss cheese. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the chicken is cooked through. Garnish with chopped parsley before serving.
