It's very simple to make these Green Chile Chicken Tacos in a slow cooker, and they taste great. The chicken has a nice kick from the green chilies and spices, and the sour cream and cheddar cheese make it smooth to balance out the heat. Great for a quick and filling meal!
Ingredients: 2 pounds boneless, skinless chicken breasts. 1 cup chopped green chilies canned or fresh. 1 onion, finely chopped. 2 cloves garlic, minced. 1 teaspoon cumin powder. 1/2 teaspoon chili powder. Salt and pepper to taste. 1 cup chicken broth. 1/2 cup sour cream. 1 cup shredded cheddar cheese. 8 small tortillas. Fresh cilantro leaves, for garnish. Lime wedges, for serving.
Instructions: Put the chicken breasts, chopped green chilies, chopped onion, minced garlic, cumin powder, chili powder, salt, and pepper in a slow cooker. Along with the chicken, pour the chicken broth over it. Place the slow cooker on low for 6 to 8 hours or high for 3 to 4 hours. Cover and cook until the chicken is soft and can be easily shred with a fork. When the chicken is done, use two forks to shred it and then mix it with the other ingredients and the cooking juices in the slow cooker. Add the sour cream and shredded cheddar cheese, and let them melt into the chicken mixture as you mix them in. To warm the tortillas up, put them on a griddle or dry skillet and cook them for one minute on each side. Spread a lot of the green chile chicken mixture out on each tortilla.
