These decadent brownie sandwich cookies are filled with rich dulce de leche, making them an indulgent treat for any occasion.
Ingredients: 1 cup dulce de leche. 1/2 cup unsalted butter, melted. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 1/2 cup all-purpose flour. 1/2 cup cocoa powder. 1/4 teaspoon salt. 1/4 teaspoon baking powder.
Instructions: Warm the oven up to 175F 350C. Put parchment paper on the bottom of a baking sheet. Melt the butter and add the sugar. Mix them together in a large bowl until they are well mixed. Slowly add the eggs, making sure to mix well after each one. It will be smooth after you mix in the vanilla extract and dulce de leche. Sift the cocoa powder, salt, baking powder, and flour together in a different bowl. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. Place spoonfuls of batter on the baking sheet that has been prepared, leaving space between each one. Bake for 10 to 12 minutes, or until the edges are firm and the middle is still a little gooey. Let the cookies cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way. After the cookies have cooled, put a small amount of dulce de leche on the bottom of one and then put another cookie on top of it. Do this with the rest of the cookies.
