Experience the flavors of the Mediterranean with this delightful einkorn pasta dish. With the tanginess of Kalamata olives, sweetness of cherry tomatoes, and the richness of sun-dried tomatoes, every bite is a burst of flavor. This recipe is not only delicious but also nutritious, thanks to the addition of spinach and whole grain einkorn pasta.
Ingredients: 8 oz Mediterranean einkorn pasta. 2 tbsp olive oil. 3 cloves garlic, minced. 1 cup cherry tomatoes, halved. 1/2 cup Kalamata olives, pitted and halved. 1/4 cup sun-dried tomatoes, chopped. 2 cups spinach leaves. 1/4 cup feta cheese, crumbled. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Follow the directions on the package to cook the einkorn pasta until it is al dente. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. Add the minced garlic and cook for one to two minutes, until the garlic smells good. Put sun-dried tomatoes, cherry tomatoes, and Kalamata olives in the pan. Stir every now and then for another 34 minutes. Add the cooked einkorn pasta and spinach leaves and mix them in. It will take another two to three minutes of cooking for the spinach to wilt. Add pepper and salt to taste. Take it off the heat. Crumble some feta cheese over the pasta and sprinkle some fresh basil leaves on top. Have fun with your Mediterranean Einkorn Pasta!
