Instructions: In a bowl, whisk together the flour, baking powder, and salt. In a separate bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Divide the dough into equal portions and tint each portion with different food coloring to create the Lego brick colors. Wrap each colored dough in plastic wrap and refrigerate for at least 1 hour. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Take a small piece from each colored dough and press them together to form Lego brick patterns. Place the Lego brick patterns on the prepared baking sheet, leaving some space between them. Bake for 10-12 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once the cookies are completely cool, decorate them with royal icing to create Lego details. Let the icing set before enjoying and serving the Lego cookies.
