Ingredients: For the dough:. 2 cups almond flour. 2 tablespoons coconut flour. 2 tablespoons powdered erythritol sweetener. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/4 cup unsalted butter, cold and cubed. 1 large egg. 1 teaspoon vanilla extract. For the filling:. 1/2 cup sugar-free fruit preserves e.g., raspberry, strawberry. For the glaze optional:. 1/4 cup powdered erythritol sweetener. 1 tablespoon heavy cream. 1/4 teaspoon vanilla extract. 1-2 tablespoons water.
Instructions: Set the oven to 350F 175C and heat it up. Put parchment paper on the bottom of a baking sheet. Mix the coconut flour, powdered sugar, baking powder, and salt together in a large bowl using a whisk. Add the cold cubed butter to the dry ingredients. Cut the butter into the flour mixture with a pastry cutter or fork until it looks like big crumbs. To make a dough, add the egg and vanilla extract to the mix and stir it in well. You can add a little water, one tablespoon at a time, if the dough is too dry. Split the dough in half, making two equal parts. Roll out one piece between two pieces of parchment paper into a rectangle that is about 1/8 inch thick. Do it again with the other piece of dough. Allow a small border around the edges of one of the rectangles of rolled-out dough to show where the sugar-free fruit preserves were spread out. Carefully place the other rectangle of rolled-out dough on top of the dough that has preserves on it. Cut the dough's edges with a knife or pizza cutter to make them straight and smooth. Then, to make the pop tarts, cut the dough into smaller rectangles. Place the pop tarts on the baking sheet that has been prepared. Crimp the edges of each pop tart with a fork to make sure they stay closed. The pop tarts should be baked in a hot oven for 12 to 15 minutes, or until they turn golden brown. If you want to make a glaze, mix the powdered sugar, heavy cream, vanilla extract, and water with a whisk until the mixture is smooth and easy to pour. Do this while the pop tarts are baking. Let the pop tarts cool all the way down on the baking sheet after taking them out of the oven. If you want, you can drizzle the glaze over the pop tarts after they have cooled. As a treat, serve and enjoy these homemade keto-friendly pop tarts!
