These muffins taste like a traditional chocolate-glazed doughnut but are easier to eat because they are muffins. At any time of the day, they're great for breakfast or as a sweet treat.
Ingredients: 1 1/2 cups all-purpose flour. 1/2 cup granulated sugar. 1/4 cup unsweetened cocoa powder. 1 1/2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 cup buttermilk. 1/4 cup vegetable oil. 1/2 tsp vanilla extract. 2 large eggs. 1/2 cup mini chocolate chips. 1/4 cup unsalted butter, melted. 1/2 cup powdered sugar. 2 tbsp milk. 1/2 tsp vanilla extract.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, whisk together the buttermilk, vegetable oil, vanilla extract, and eggs until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Fold in the mini chocolate chips. Fill each muffin cup about 2/3 full with the batter. Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean. While the muffins are baking, make the glaze by mixing melted butter, powdered sugar, milk, and vanilla extract in a small bowl until smooth. Once the muffins are done, let them cool for a few minutes in the pan before transferring them to a wire rack to cool completely.
