Ingredients: 1 cup oat flour. 1/2 cup protein powder. 1 tsp baking powder. 1/2 tsp cinnamon. 1/4 tsp salt. 1 ripe banana. 2 eggs. 1 cup milk of choice. 1 tsp vanilla extract. 1 tbsp honey or maple syrup. Cooking spray or butter for the pan.
Instructions: Mix protein powder, baking powder, cinnamon, salt, and oat flour in a bowl. The ripe banana should be mashed in a different bowl. The eggs, milk, vanilla extract, honey or maple syrup should then be whisked in. Add the dry ingredients to the wet ones and mix them together until everything is well mixed. Set a nonstick skillet or griddle over medium heat and use cooking spray or butter to lightly coat it. For every pancake, pour 1/4 cup of the batter onto the hot pan. About two to three minutes of cooking will bring bubbles to the top. Flip and cook for another one to two minutes, until golden brown. Do it again with the rest of the batter. You can top the protein pancakes with fresh berries, Greek yogurt, or a drizzle of honey, or anything else you like. Enjoy your tasty and healthy protein pancakes!
