These pumpkin waffles are quick and easy to make and are great for a cozy breakfast or brunch. These are a great treat for fall or any time of the year because they are full of warm spices and pumpkin flavor.
Ingredients: 1 cup canned pumpkin puree. 2 cups all-purpose flour. 2 tablespoons brown sugar. 1 tablespoon baking powder. 1/2 teaspoon salt. 1 1/2 teaspoons ground cinnamon. 1/2 teaspoon ground nutmeg. 2 large eggs. 1 3/4 cups milk. 1/4 cup melted butter. 1 teaspoon vanilla extract.
Instructions: Put the flour, brown sugar, baking powder, salt, cinnamon, and nutmeg in a large bowl and mix them together. Whisk the eggs, milk, melted butter, vanilla extract, and pumpkin puree together in a different bowl until everything is well mixed. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Don't mix it too much; a few lumps are fine. Follow the directions on the package to heat up your waffle iron, and then use nonstick cooking spray or a little melted butter to lightly grease it. Place enough batter on the waffle iron that has already been heated to cover the waffle grid. Follow the directions on the waffle iron's box to cook the waffles until they are golden brown and crisp. Take the pumpkin waffles out of the waffle iron with care, and serve them hot. For extra flavor, you can add maple syrup, whipped cream, chopped nuts, or powdered sugar on top. Enjoy your tasty pumpkin waffles that you made yourself!
