It was ALL SMILES on our last and most difficult day of Cookery Camp for Kids! 😅 We were multitasking like a well oiled machine and they were utilizing skills we had learned the last two days! 🙌 I saw a huge improvement in all their abilities not to mention their confidence in the kitchen has soared! 🥳 We rounded off the cookbook with a spur of the moment 12th recipe, a homemade chocolate marshmallow cookie candy that had us all impressed and full of excitement from a sugar rush! 🍫 ❤️ What a wonderful week it has been! Learning by ALL (even the teacher 🙃) & good food for family was the name of the game this week. FIESTA was the theme for day 2 of the Cookery Camp for Kids and boy did we party! 🪅 🇲🇽 🌯🥑🌶🍌🍓🍍 My stellar students did OUTSTANDING yet again and created a spin on traditional enchiladas & guacamole, plus a crema that was tailored to each kiddos tastes! We finished it all off with a festival of chocolate dipped fruit, topped with sprinkles of course! ✨ These kids are not afraid to get their hands dirty and are learning so much! Fun was had by all, including Chef Todd, who taught them how to cut up a pineapple to save some money at the grocery store! 🍍💰 So many tips and tricks were flying around today, I even learned a few new ones! Pan seared salmon on a bed of couscous salad topped with home sprouted broccoli sprouts and quick pickled red onion & cucumber! SO JAM GOOD! We were going for Mediterranean flavors and ended up with a deliciously clean, full flavored meal with Mediterranean undertones... all to say... SO JAM GOOD!!! Ever have just one of those odd days? Not bad, sort of productive, but not great... Today was that for me, there was just something in the air that was fighting me all day... 😖 I love getting creative in the kitchen, but today the prospects of a plain, but good, left over hearty chicken & potato soup was not a thrilling end to this lackluster day. Meh 😒 Things can change for the good, even at the last minute, so I decided to give this leftover soup a much needed make over to save this day! 🥄🍗🥕🥔🥬🌱🍲🤤 I added some Italian sausage, frozen peas & spinach, fresh carrots, a hint of half & half and finished it off with an unexpected addition of dill (Yes, dill!!! We are getting our first cold snap of the year in my parts and as is often the case, today was a glorious day ahead of the front... what Grandma Lillian would call a weather breeder. 🌞🌬🥶 This weekend was devoted to preparing the garden for the coming freeze. I watered all the trees and shrubs, cut back the umbrella palms and de-fruited the tomato plants! 🍅🌿✂️ 💦 🌳 I got 3 of these blackberry boxes filled to the brim with GREEN tomatoes. I could only get about 3 to turn red this year, but I’m not crying about it because I have a plan for these green gems... 💚💚💚💚💚 Whatever will I do with all these green tomatoes? Fry them? Make a salsa out of them? Nope... these beauties are destined for a southern classic, Chow Chow! A waste not want not relish that’s great on beans & cornbread, hot dogs, chili garnish, and so much more!
