This recipe turns leftover turkey into a mouthwatering burger, which is a great way to use up Thanksgiving or holiday meal leftovers. You won't even know that this sandwich is made from leftovers because of the way the flavors and textures work together.
Ingredients: 1 1/2 cups leftover turkey meat, shredded. 1/2 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1/4 cup chopped fresh parsley. 1/4 cup diced red onion. 1/4 cup mayonnaise. 2 cloves garlic, minced. 1 egg. Salt and pepper to taste. 4 hamburger buns. Lettuce leaves. Sliced tomatoes. Sliced red onion. Cranberry sauce for topping.
Instructions: In a large bowl, combine the shredded turkey, breadcrumbs, Parmesan cheese, chopped parsley, diced red onion, mayonnaise, minced garlic, and egg. Season the mixture with salt and pepper to taste, and then mix until well combined. Divide the mixture into 4 equal portions and shape them into burger patties. Preheat a grill or stovetop skillet over medium-high heat and grease with oil. Cook the turkey burger patties for about 4-5 minutes on each side or until they are cooked through and have a nice golden brown crust. Toast the hamburger buns on the grill or in a toaster until they are lightly browned. To assemble the burgers, place lettuce leaves on the bottom half of each bun, followed by a turkey patty. Top with sliced tomatoes and red onion, and then drizzle cranberry sauce on top. Place the other half of the bun on top to complete the sandwich. In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan, eggs, milk, green onions, garlic powder, smoked paprika, salt, and pepper. Mix well until smooth and creamy. Spoon the potato mixture into the prepared muffin tin, filling each cup about three-quarters full. Bake for 20-25 minutes, until the tops are golden and the nibbles are set. Let cool slightly before removing from the muffin tin. Serve warm and enjoy the cheesy, fluffy goodness! Perfect for a snack, side dish, or appetizer!
