A refreshing and hearty Mediterranean-inspired couscous salad that's perfect for a light meal or a side dish. Packed with fresh veggies, herbs, and a zesty dressing, it's a delightful vegan option that will satisfy your taste buds.
Ingredients: 1 cup couscous. 1 cups vegetable broth. 1 cup cherry tomatoes, halved. 1 cup cucumber, diced. cup red bell pepper, chopped. cup red onion, finely chopped. cup Kalamata olives, pitted and sliced. cup fresh parsley, chopped. cup fresh mint leaves, chopped. 3 tablespoons extra-virgin olive oil. 2 tablespoons lemon juice. 2 cloves garlic, minced. Salt and black pepper to taste.
Instructions: Bring the vegetable broth to a boil in a medium-sized saucepan. When it starts to boil, take it off the heat and add the couscous. Put the lid on top and wait 5 minutes. Use a fork to fluff up the couscous, then move it to a large mixing bowl. Wait until it's cool enough to touch. The cucumber, red bell pepper, red onion, Kalamata olives, parsley, and mint should all be put in the same bowl. Mix the extra-virgin olive oil, lemon juice, garlic powder, salt, and black pepper in a small bowl using a whisk. Put the dressing on top of the vegetables and couscous. Add everything to the bowl and mix it well. Put the salad in the fridge for at least 30 minutes before you serve it so that the flavors can mix.
