Ingredients: 2 beef steaks preferably ribeye or New York strip. 2 tablespoons ground coffee. 2 tablespoons cocoa powder. 1 tablespoon brown sugar. 1 teaspoon salt. 1 teaspoon black pepper. 1 tablespoon olive oil. 1 tablespoon butter. 1/4 cup bourbon. 1/2 cup heavy cream. 1 tablespoon whole peppercorns. Salt to taste.
Instructions: In a small bowl, mix together ground coffee, cocoa powder, brown sugar, salt, and black pepper. Rub the mixture evenly over both sides of the steaks, pressing it into the meat. Heat olive oil in a skillet over medium-high heat. Add steaks to the skillet and cook to desired doneness, about 4-5 minutes per side for medium-rare. Remove steaks from the skillet and let them rest for a few minutes. In the same skillet, melt butter over medium heat. Add bourbon and peppercorns, cook until slightly reduced, about 2-3 minutes.
